Since 1960, Jeune Montagne has been producing Laguiole AOP cheese, Aligot de l'Aubrac and Tome fraîche de l'Aubrac IGP in accordance with the traditions handed down by the buronniers (cheese makers) of Aubrac. All Jeune Montagne specialities are made with milk from cows raised by producers in the Aubrac and Carladez regions.
